Summer and travel go hand in hand. But just because you’re on vacation doesn’t mean you should throw out your healthy eating habits. Stay healthy and happy in the warm weather by following these easy tips:

Eat right: Take on-the-go snacks like vegetables, whole-grain crackers or trail mix. Fresh fruit is also a convenient snack. 

Keep cool: Pack your perishable foods in a cooler with plenty of ice.

Hydrate: Drink plenty of water. For a flavorful twist, add strawberries and lemon or blueberries and lime to iced water.

Carrot Cookies

Executive chef Chris Linaman, Overlake Medical Center


1 cup coconut oil (not melted)
¾ cup sugar*
1 egg†
1 cup grated raw carrot†
2 cups all-purpose flour, unbleached†
2 teaspoons baking powder†
½ teaspoon sea salt
1 teaspoon bourbon vanilla)

Zest of 1 orange†
Juice of 1 orange†
Powdered sugar as needed*


Preheat oven to 350°F (325°F if convection oven). Mix all cookie ingredients in medium mixing bowl (to avoid overworking the dough, do this by hand). Drop onto ungreased cookie sheet and bake for 8–10 minutes or until lightly colored. Allow to cool on cookie sheet.Allow cookies to cool completely as you make the icing drizzle by mixing enough powdered sugar into the juice and zest to form a thicker drizzle.

Drizzle cookies with icing prior to enjoying your new favorite cookie!

*Use cane sugar to avoid genetically modified organisms (GMOs).
